How to make Vanjaram Fish Fry
In a mixing bowl, add all the spice powders, ginger garlic paste and tamarind paste. Add little water and make it into a fine paste.
Now apply it all over the fish. Let it marinate for at least 30 mins.
You can either deep fry or roast it over a tawa. I always prefer tawa fry.
Heat a tawa and add 3 tsp of oil. Spread it all over the tawa.
Once the tawa is hot, place the fish and drizzle oil over it. The heat should be high. Let it cook for 1 min.
Now flip the fish and drizzle some oil. Let it cook for a min.
Now reduce the heat to low and flip the fish and cook for a min.
Flip again and cook for a min. The fish should be cooked in high heat on both sides for 1 min each and in low heat for 1 min each side.
- Tamarind Paste gives a good flavor to the fish. You can even use lemon juice instead of tamarind.
- Adjust Spice level according to your taste.
