In a bowl, add water, a tsp of oil and bring it to a boil. Once the water starts to boil, turn off the flame
Add the rice flour, salt in a bowl and mix well. Add hot water little bu little to the rice flour and stir with a spatula. Continue adding water little by little to the rice flour and mix well until a soft, smooth and non-sticky dough is formed.
When the dough is warm, knead it for 1-2 mins.
Grease the inside portion of the idiyappam press. Now take a portion of the dough and fill it inside the idiyappam maker. Press it over the steamer plate well so that you get nice and thin rice noodles.
Steam the idiyappam for about 5 mins. Let the idiyappam cool before gently removing from the steamer plate.
Serve hot with Veg Kurma or sweetened coconut milk.
Notes
I used 1 1/2 cups of water for 2 cups of Rice flour. It may vary based on the quality of rice flour.
If the dough is sticky while kneading, grease your palm and try kneading again.
Do not overcook the idiyappam, it will turn rubbery.
