Wash Raw Mango well. Peel the skin and grate it.
In a pan, dry roast the fenugreek seeds. Once it is cooled, grind it to a fine powder. keep aside.
In a pan, add gingelly oil/ nallennai. Once hot, add mustard seeds and asafoetida.
Let the mustard seeds sputter. Now add the grated mango, turmeric powder, salt and mix well.
Keep the flame low and cook till the grated mangoes turn soft. It takes about 4 - 5 minutes.
Add red chilli powder to the cooked raw mango and mix well. Keep the flame low and cook till the oil oozes out of the thokku.
Now add fenugreek powder, mix well and Switch off the flame.
Let it come to room temperature. Store the thokku in an air-tight container and refrigerate for a long life.
Delicious Mangai Thokku is ready!
