Mix the chicken lollipop pieces with finely chopped onions, ginger, garlic, green chili, pepper powder, salt, lemon juice, red chili paste, dark soy sauce, and oil.
Marinate for 1 hour.
After marination, add the plain flour (maida) and cornflour. Mix well and sprinkle very little water to help the mixture bind.
Wait for 10 minutes.
Pull the meat towards the end of the bone and rotate to form a lollipop shape.
Heat oil in a deep pan.
Carefully hold each piece for a few seconds in the hot oil before fully dropping it in. This helps maintain the lollipop shape.
