In a bowl, bring water to boil. Add soya chunks and switch off the flame. Close with a lid and let them sit for 10 mins.
Drain the water and wash the cooked soya chunks in cold water well. Now squeeze the soya chunks to remove water and keep aside. If you are using bigger variety of soya chunks, then cut into 2 pieces.
In a bowl, add corn flour, rice flour, ginger garlic paste, chilli powder, Garam masala and salt.
Add 2 tbsp of water and make it into a paste. Do not make it either too thick or too thin.
Add cooked Soya Chunks to the masala. Mix well. The masala should be coated all over the Soya Chunks.
Heat oil in a pan. Check if the oil is hot enough for frying, by dropping a very small piece of Meal maker. It should rise immediately.
Drop the Meal maker into pan. Do not over crowd the pan.
Fry it till golden. Remove it and drain on kitchen tissue.
Now fry curry leaves. Place curry leaves over the perforated ladle and gently place it in the oil. Remove it quickly once curry leaves starts frying.
