In a pressure cooker, add cleaned mutton pieces, ginger garlic paste, salt, turmeric powder and enough water to immerse the mutton pieces. Pressure cook for 5 whistles.
In a pan, add oil. Once hot, add chopped shallots, garlic, curry leaves and Red Chillies.
Cook till shallots turn translucent.
Add the cooked mutton along with the stock and salt.
Roast in medium flame till it becomes dry.
Mutton Uppu Kari is ready.
