How to make Rice Kheer / Paal Payasam in Pressure Cooker
Wash the rice well and drain it completely.
In a pan, add ghee. Once hot, add cashews and fry till golden brown. Remove the fried cashews to a plate.
With the remaining ghee in the pan, fry raisins till it plumps up.
In a pressure cooker, add rice, milk and sugar. Pressure cook in medium flame for 3/4 whistles. Let the pressure settle down naturally.
Open the pressure cooker, Mix well. If the consistency is thick, add 1/2 cup of milk and simmer till desired consistency.
Add Cardamom, fried cashews, raisins and ghee to the kheer and combine well.
Transfer to serving bowls. Serve it either chilled or warm.
Notes
Use Full fat milk for rich and creamy Kheer.
Adjust the consistency of kheer by adding milk and simmering till desired consistency.
