How to make Rice Kheer / Paal Payasam in Pressure Cooker

  • Wash the rice well and drain it completely.
  • In a pan, add ghee. Once hot, add cashews and fry till golden brown. Remove the fried cashews to a plate.
  • With the remaining ghee in the pan, fry raisins till it plumps up.
  • In a pressure cooker, add rice, milk and sugar. Pressure cook in medium flame for 3/4 whistles. Let the pressure settle down naturally.
  • Open the pressure cooker, Mix well. If the consistency is thick, add 1/2 cup of milk and simmer till desired consistency.
  • Add Cardamom, fried cashews, raisins and ghee to the kheer and combine well.
  • Transfer to serving bowls. Serve it either chilled or warm.

Notes

  • Use Full fat milk for rich and creamy Kheer.
  • Adjust the consistency of kheer by adding milk and simmering till desired consistency.
