In a wide pan, bring water to boil. Add baby potatoes and cook for 5 - 7 minutes. Do not over-cook. Once cooked, drain the water and pour cold water over the potatoes. Let it cool.
Now place the potatoes on a chopping board and with a help of a fork gently press them as shown in the pics below .
In a bowl, add 2 tbsp of All Purpose flour, 2 tbsp of Corn Flour and a pinch of salt. Add water and form a very thin paste.
In a pan, add oil and heat in medium flame. once the oil is hot, dip the potatoes in the prepared paste and fry in the oil.
Keep the flame in medium and fry till golden and crisp. Once golden, place the fried potatoes on a kitchen tissue to drain excess oil.
In a bowl, add 3 tbsp of mayonnaise, 1 tsp of onion powder, 1 tsp of garlic powder, 1 tsp of red chilli powder, 1 /4 tsp of roasted jeera powder, 1/2 tsp of dried Italian herbs, salt and 1 tbsp of tomato ketchup. Mix well.
In a plate, place the fried potatoes and top with the spicy Cajun mayonnaise mix. Now sprinkle finely chopped onions over the dressing and serve!
