1cupCoriander leavestightly packed
1tspCumin seeds
2tspChana Dal
3Green chillies
2cupsCooked Rice

How to make Coriander Rice / Kothamalli sadam
Blanch the coriander leaves in hot water for few seconds(till leaves wilt). Blanching is for preserving the rich colour of the coriander leaves. Put the coriander in hot water for few seconds and remove it to cold water.
In a pan, add oil. Once hot, add Cumin seeds, Chana Dal and Green chillies. Fry till Dal turns golden.
Now add Blanched Coriander leaves and fry for a min. Grind this to a fine paste.
In another pan, add oil for tempering. Once hot, add mustard seeds and let it crackle. Next add urad dal, fry till it turns golden.
Add the Coriander paste and saute well for 1-2 mins.
Now add cooked rice and required salt to the paste. Mix well.
Coriander Rice is ready to be served!
Notes
Spread the cooked rice over a plate and cool it.
Adjust spiciness based on your preferences. This recipe gives a medium spicy rice.
