Checkout Coriander Rice Recipe – An easy, healthy and flavourful rice recipe with Coriander leaves which can be put together in few mins. This Variety rice will be a good lunch box option.

This Coriander recipe is adapted from Venkatesh bhat’s cookery show. The recipe for Kothamalli sadam is so simple and it is apt for busy days. We make a paste with blanched coriander leaves, chana dal, green chillies, cumin seeds and mixed with Cooked rice. If you have cooked rice in hand you can put up this delicious variety rice under 10 mins. You can pack it for lunch box with a raita or papad or you can pair it up with spicy potato fry or mushroom potato pepper fry.

From the time I saw coriander rice by venkatesh bhat in a show, it started featuring my kitchen regularly. It is also one of the easiest way to include greens in our meal. The rich colour is preserved by blanching the coriander leaves. Kids will also love the beautiful green colour, You can make variety rices like beetroot pulao and lemon rice for lunch box. Coriander Rice | Kothamalli Sadam

Ingredients

  • 1 cup Coriander leaves tightly packed
  • 1 tsp Cumin seeds
  • 2 tsp Chana Dal
  • 3 Green chillies
  • 2 cups Cooked Rice

Instructions

How to make Coriander Rice / Kothamalli sadam

  • Blanch the coriander leaves in hot water for few seconds(till leaves wilt). Blanching is for preserving the rich colour of the coriander leaves. Put the coriander in hot water for few seconds and remove it to cold water.
  • In a pan, add oil. Once hot, add Cumin seeds, Chana Dal and Green chillies. Fry till Dal turns golden.
  • Now add Blanched Coriander leaves and fry for a min. Grind this to a fine paste.
  • In another pan, add oil for tempering. Once hot, add mustard seeds and let it crackle. Next add urad dal, fry till it turns golden.
  • Add the Coriander paste and saute well for 1-2 mins.
  • Now add cooked rice and required salt to the paste. Mix well.
  • Coriander Rice is ready to be served! 

Notes

  1. Spread the cooked rice over a plate and cool it.
  2. Adjust spiciness based on your preferences. This recipe gives a medium spicy rice.
