- 250 Grams Kovakkai / Tindora
- 1/4 tsp Turmeric powder
- 3/4 tsp Red chilli powder
- 1/4 tsp Dry Mango powder
- 2 tbsp Oil – 2 tbsp
- Salt – as required
- Curry Leaves – few
How to make Kovakkai Fry / Kovakkai Poriyal
Wash and Cut Tindora into thin slices, discarding the edges.
Add oil in a kadai.
Add curry leaves and sliced kovakkai.
Mix well. Kovakkai should be coated well with oil.
Now add turmeric powder, Red chilli powder and salt.
Cook in medium flame, stirring now and then.
Fry till crisp and add dry mango powder.
Switch off the flame.
- You can even cut tindora lengthwise
- Instead of dry mango powder, you can also add chat masala
- Do not use ripened Kovakkai
