Ingredients

  • 1 cup Meal maker / Soya Chunks
  • 10 Shallots or 1 Medium sized onion
  • 1 tsp ginger garlic paste
  • 1 tsp Red chilli powder
  • 1 1/2 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 3 tsp Roasted Gram dal (Pottukadalai)
  • 1 inch Cinnamon
  • 2 cloves
  • 1 Cardamom
  • 2 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Urad Dal
  • Curry Leaves Few
  • Salt As Required

Instructions

How to make meal maker curry / meal maker kulambu

  • In a bowl, bring water to boil. Add soya chunks and switch off the flame. Close with a lid and let them sit for 10 mins. Drain the water and wash the cooked soya chunks in cold water well. Now squeeze the soya chunks to remove water and keep aside.
  • Heat a kadai/pan, add 2 tbsp of oil. Once hot, add mustard seeds and let them crackle. Add urad dal and let it turn golden.
  • Now add Curry leaves.
  • Add chopped shallots and cook till translucent. Shallots give a nice taste to the Meal maker Kulambu. If you do not have shallots, add medium sized Onion chopped finely.
  • Now add ginger garlic paste and cook till raw smell leaves.
  • Add Turmeric powder, Red Chilli powder, coriander powder and mix well. Keep the flame low, so the spice powders are not burnt.
  • Now add the cooked and squeezed Soya chunks to the masala and mix well for about 3 - 4 minutes.
  •  In a blender, add 3 tsp of roasted gram dal (pottukadalai), 1 cardamom, 2 cloves and a small cinnamon stick. Grind it to a fine powder.
  • Add this powder to a 1 1/2 cup of water and mix well. add this to the masala.
  • Now add salt and keep the flame in medium. Let it simmer for 5 - 7 minutes or till the raw smell leaves.
  • The curry will start to thicken, switch off at the desired consistency.
  • Garnish with chopped coriander leaves.

Notes

  • Rinse the soya chunks twice before squeezing. This helps in getting rid of the smell.
  • Pottakadalai or Roasted Gram dal thickens the Curry, so switch off at desired consistency.
  • You can add any vegetables along with soya chunks.
  • Serve with Rice, Roti, Dosa or Idly.
