Soya chunks (also called as Meal maker or soya nuggets) are made from soy beans and is a very good source of protein. They are considered to have protein content equivalent to that of eggs. they work very good as meat substitutes. If you are vegetarian / vegan, you can use soya chunks to incorporate protein to your diet. As meal maker is rich in protein, it is good for kids. You can add it in biryani, fried rice or make soya chunks fry or you can substitute in any non-veg recipes instead of meat. It tastes so good. Meal maker absorbs the flavour well and tastes delicious.

The Meal maker Curry / Meal maker Kulambu Recipe which i’m sharing here is so simple. It requires very less ingredients and can be prepared under 20 minutes. This Meal maker Curry goes well with Rice, Idly, Dosa and Roti. Some people complain of the smell of soya. If properly cooked, you will not get any smell. How to make Meal maker Curry / Soya chunks curry

  1. In a bowl, bring water to boil. Add soya chunks and switch off the flame. Close with a lid and let them sit for 10 mins.
  2. Drain the water and wash the cooked soya chunks in cold water well. Now squeeze the soya chunks to remove water and keep aside. If you are using bigger variety of soya chunks, then cut into 2 pieces.
  3. Heat a kadai/pan, add 2 tbsp of oil. Once hot, add mustard seeds and let them crackle. Add urad dal and let it turn golden.
  4. Now add Curry leaves.
  5. Add chopped shallots and cook till translucent. Shallots give a nice taste to the Meal maker Kulambu. If you do not have shallots, add medium sized Onion chopped finely.
  6. Now add ginger garlic paste and cook till raw smell leaves.
  7. Add Turmeric powder, Red Chilli powder, coriander powder and mix well. Keep the flame low, so the spice powders are not burnt.
  8. Now add the cooked and squeezed Soya chunks to the masala and mix well for about 3 – 4 minutes.
  9. In a blender, add 3 tsp of roasted gram dal (pottukadalai), 1 cardamom, 2 cloves and a small cinnamon stick. Grind it to a fine powder.
  10. Add this powder to a 1 1/2 cup of water and mix well. add this to the masala.
  11. Now add salt and keep the flame in medium. Let it simmer for 5 – 7 minutes or till the raw smell leaves.
  12. The curry will start to thicken, switch off at the desired consistency.
  13. Garnish with chopped coriander leaves.Meal maker curry in a bowl

Ingredients

  • 1 cup Meal maker / Soya Chunks
  • 10 Shallots or 1 Medium sized onion
  • 1 tsp ginger garlic paste
  • 1 tsp Red chilli powder
  • 1 1/2 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 3 tsp Roasted Gram dal (Pottukadalai)
  • 1 inch Cinnamon
  • 2 cloves
  • 1 Cardamom
  • 2 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Urad Dal
  • Curry Leaves Few
  • Salt As Required

  • Pottakadalai or Roasted Gram dal thickens the Curry, so switch off at desired consistency.
  • You can add any vegetables along with soya chunks.
  • Serve with Rice, Roti, Dosa or Idly.
