Ingredients

  • 500 Grams Mutton
  • 2 tbsp Ghee
  • 2 tsp Ginger garlic paste
  • 1/2 tsp Turmeric powder
  • 3 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1/2 tsp Fennel seeds
  • 1/2 tsp Pepper corns
  • 1 inch Cinnamon stick
  • 2 Cloves
  • 1 tbsp Curd
  • Salt As required

Instructions

How to make Mutton Ghee Roast

  • In a pressure cooker, add ghee.
  • Add ginger garlic paste and fry in ghee for few seconds.
  • Now add cleaned mutton pieces and turmeric.
  • Mix well till ginger garlic paste is coated well over mutton pieces.
  • Add 1 cup of water or enough water to cover mutton pieces.
  • Pressure cook for 7 – 8 whistles on medium whistles.

To make mutton ghee roast masala:

  • Dry roast red chillies, coriander seeds, cumin seeds, fennel seeds, peppercorns, cinnamon and cloves. Fry till nice aroma emanates. Do not burn the spices. 
  • Switch off the flame and let it cool. 
  • Add little water and blend it to a fine paste. 
  • In a kadai, add ghee.
  • Add the blended masala and fry for few seconds.
  • Now add the mutton stock and let it cook for few minutes.
  • Add the cooked mutton pieces, curd and required salt.
  • Mix well and let the masala and mutton pieces cook along.
  • Cook for 4 – 5 mins in medium flame.
  • If you want to have in a semi gravy consistency, you can switch off the flame now Or If you like to have it dry, roast it well for few more minutes.
  • Switch off the flame and serve.

Notes

  • Adjust spice level according to your taste preferences.
  • Cook for 2/3 more whistles if mutton is under cooked.
  • You can use 1/2 tsp of Raw papaya taste while cooking Mutton. Raw papaya paste will help in cooking of mutton.
  • You can also try this recipe with chicken instead of mutton.
