Mutton Ghee Roast

I’m very happy to write this post as this is my 100th post. Its been 9 months since I started my food blog and posting the 100th recipe makes me happy. I would like to thank all the followers for extending support. Today I’m going to share one of my favourite recipes which is always a success at home. The Recipe is Mutton Ghee Roast.

Mutton Ghee Roast is a mangalorean delicacy which is spicy and flavourful. Mutton pieces are cooked in ghee and flavoured with a special spicy masala. The succulent pieces of mutton coated with spicy masala will make you crave for more. This goes well with Rice, chapathi and Dosa. You can dry roast or have it semi gravy consistency. This Mutton ghee roast recipe is spicy, if you want it to be less spicy reduce 2 red chillies. Traditionally mutton is slow cooked, but in this recipe I pressure cooked the mutton till 3/4th done and slow cooked and roasted with the special masala. An important thing to be noted is, ” Don’t hesitate to add more Ghee”.  Add ghee generously. Try this Mutton Ghee Roast Recipe at home and let me know how you liked it. How to make Mutton Ghee Roast

  1. In a pressure cooker, add ghee.
  2. Add ginger garlic paste and fry in ghee for few seconds.Mutton Ghee Roast
  3. Now add cleaned mutton pieces and turmeric. Mix well till ginger garlic paste is coated well over mutton pieces.Mutton Ghee Roast
  4. Add 1 cup of water or enough water to cover mutton pieces. Pressure cook for 7 – 8 whistles on medium whistles.
  5. In a Pan, dry roast red chillies, coriander seeds, cumin seeds, fennel seeds, peppercorns, cinnamon and cloves. Fry till nice aroma emanates. Do not burn the spices. Switch off the flame and let it cool.Mutton Ghee Roast
  6. Add little water and blend it to a fine paste.Mutton Ghee Roast
  7. In a kadai, add ghee. Add the blended masala and fry for few seconds.Mutton Ghee Roast
  8. Now add the mutton stock and let it cook for few minutes.Mutton Ghee Roast
  9. Add the cooked mutton pieces, curd and required salt.Mutton Ghee Roast
  10. Mix well and let the masala and mutton pieces cook along. Cook for 4 – 5 mins in medium flame.Mutton Ghee Roast
  11. If you want to have in a semi gravy consistency, you can switch off the flame now Or If you like to have it dry, roast it well for few more minutes.
  12. Switch off the flame and serve Mutton Ghee Roast with Steamed Rice or Chapathi.

Ingredients

  • 500 Grams Mutton
  • 2 tbsp Ghee
  • 2 tsp Ginger garlic paste
  • 1/2 tsp Turmeric powder
  • 3 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1/2 tsp Fennel seeds
  • 1/2 tsp Pepper corns
  • 1 inch Cinnamon stick
  • 2 Cloves
  • 1 tbsp Curd
  • Salt As required

Instructions

How to make Mutton Ghee Roast

  • In a pressure cooker, add ghee.
  • Add ginger garlic paste and fry in ghee for few seconds.
  • Now add cleaned mutton pieces and turmeric.
  • Mix well till ginger garlic paste is coated well over mutton pieces.
  • Add 1 cup of water or enough water to cover mutton pieces.
  • Pressure cook for 7 – 8 whistles on medium whistles.

To make mutton ghee roast masala:

  • Dry roast red chillies, coriander seeds, cumin seeds, fennel seeds, peppercorns, cinnamon and cloves. Fry till nice aroma emanates. Do not burn the spices. 
  • Switch off the flame and let it cool. 
  • Add little water and blend it to a fine paste. 
  • In a kadai, add ghee.
  • Add the blended masala and fry for few seconds.
  • Now add the mutton stock and let it cook for few minutes.
  • Add the cooked mutton pieces, curd and required salt.
  • Mix well and let the masala and mutton pieces cook along.
  • Cook for 4 – 5 mins in medium flame.
  • If you want to have in a semi gravy consistency, you can switch off the flame now Or If you like to have it dry, roast it well for few more minutes.
  • Switch off the flame and serve.

Notes

  • Adjust spice level according to your taste preferences.
  • Cook for 2/3 more whistles if mutton is under cooked.
  • You can use 1/2 tsp of Raw papaya taste while cooking Mutton. Raw papaya paste will help in cooking of mutton.
  • You can also try this recipe with chicken instead of mutton.

Notes:

  1. Adjust spice level according to your taste preferences.
  2. Cook for 2/3 more whistles if mutton is under cooked.
  3. You can use 1/2 tsp of Raw papaya taste while cooking Mutton. Raw papaya paste will help in cooking of mutton.
  4. You can also try this recipe with chicken instead of mutton.
