In a Pressure cooker, add ghee and Oil. Then add Bay leaves, cinnamon, cloves, cardamom, kalpasi (balck stone flower) and Marathi moggu.
Now add sliced onions and slit green chillies. Cook till onions turn translucent.
Add ginger-garlic paste and fry till raw smell leaves. (always use freshly made ginger garlic paste for biryanis)
Now add Turmeric powder, red chilli powder, coriander powder and garam masala. Fry for few seconds.
Add sliced tomatoes and cook till it turns mushy.
Now add Soaked Rice and mix well.
For 1 cup of basmati Rice, add 2 cups of water. ( water requirement may vary from brand to brand. Check instructions on the pack). You can also use regular rice instead of basmati.
Add half of the Paneer cubes, salt, chopped coriander and mint leaves. Check for salt. Now the water should be slightly salty. Pressure cook for 2 whistles in medium flame.
Meanwhile, Take remaining paneer cubes in a bowl. Add Red chilli powder, salt, garam masala and cornflour. Mix well and Fry the paneer cubes in oil.
Once the rice is perfectly cooked, add these fried paneer cubes over rice and serve hot!
