Masala Vada also called as Paruppu Vadai or Masal Vadai is a deep fried fritter made with Chana dal and spices. Masala vada is a Popular snack in Tamilnadu. They are crispy on the outside and soft inside. My husband loves Masal vadai and he was impressed when I made this. Who doesn’t love a hot cup of tea with crispy vadai? This is a simple recipe which tastes delicious. Try this recipe at home and enjoy with your family and friends. Follow step by step procedure with pictures. Masala Vada

Masala vada also called as Paruppu Vadai or Masal Vadai is a deep fried fritter made with Chana dal and spices.

Ingredients

  • 1/2 cup Chana dal / Kadalai paruppu
  • 3-4 Red Chilies
  • 1 tsp fennel seeds / Sombu
  • 1 Onion Finely Chopped
  • 1 Green chilies Finely chopped
  • Curry leaves Few
  • 1 tbsp Coriander leaves Finely Chopped
  • Salt as required
  • Oil for deep frying

Instructions

  • Soak Chana dal in water for 4 hours.
  • Drain the water completely. Reserve 1 tbsp of channa dal aside.
  • Grind 2 red chilies and fennel seeds first and then add the rest of the chana dal and grind coarsely without adding water.
  • Then add finely chopped onions, reserved dal, finely chopped green chilies, finely chopped coriander leaves and few curry leaves to the above mixture.
  • Heat oil in a Kadai. Take a pinch of the above mix and drop it in oil. If it raises immediately then the oil is hot enough for frying. Take a small lemon sized ball of the mix, flatten it with your hands and gently slip it into the oil.
  • Keep in medium heat and fry the vada both sides till golden brown and crisp. Repeat the same procedure for the rest of the mix.
  • Serve hot and enjoy!!

Notes

Make sure you add Onions just before frying. 
Adjust spice levels according to your taste.

Step by Step Procedure with Pictures

1. Keep Your Ingredients Ready! Soak Chana dal in water for 4 hours. Drain the water completely. Reserve 1 tbsp of chana dal aside.

  2. Grind 3 red chilies and fennel seeds first and then add the rest of the channa dal and grind without adding water    coarsely.

3. Then add finely chopped onions, reserved 1 tbsp dal, finely chopped green chilies, finely chopped coriander leaves and few curry leaves to the above mix.

4. Heat oil in a Kadai. Take a pinch of the above mix and drop it in oil. If it raises immediately then the oil is hot enough for frying. Take a small lemon sized ball of the mix, flatten it with your hands and gently slip it into the oil.

5. Keep in medium heat and fry the vada both sides till golden brown and crisp. Repeat the same procedure for the rest of the mix.

Serve Hot!
