Checkout Paneer Roll Recipe –  A lip smacking Paneer tossed in a spicy masala, wrapped in Chapathi or roomali roti is a treat to taste buds anytime. This Popular Roll is a street side Speciality in most parts of India.

It is popularly called as Paneer Kathi Roll or Paneer Frankie. I have fond memories of having Frankie during my hostel days in Chennai. It is one of my favourite street food. You can have it as a snack or brunch or at any time of the day. The outer wrap is usually made of Maida in street side. But I prefer using Whole wheat for making the outer wrap. Now lets look into the process. The first step is make to outer wrap, i.e., making chapati or roti. Next you have to make spicy Paneer filling to go inside the wrap and then prepare toppings like chopped onions and pickled green chillies. If you have leftover rotis or chapatis, then making Paneer Roll is very easy. Follow the recipe with step by step instructions and pictures below.

Paneer Roll | Paneer Wrap

Ingredients

For the Wrap or Roti

  • 1 cup Wheat Flour
  • 1/4 tsp Salt
  • 1 tsp Oil
  • 1/3 - 1/2 Cup Water add accordingly

For the Filling

  • 1 Cup Paneer Cubes
  • 1 Onion Finely chopped
  • 1 Tomato Finely chopped
  • 1 green Chilli Finely chopped
  • 1/2 tsp Ginger Garlic Paste
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala
  • 1/4 tsp Roasted Cumin Powder
  • Salt As required

For Toppings

  • 1 Onion Medium sized, Finely chopped
  • 2 Green Chillies Finely chopped
  • 2 tbsp Vinegar or Lemon Juice
  • 1/2 tsp Chaat Masala

Instructions

For the wrap or roti

  • In a bowl, add 1 cup wheat flour, 1/4 tsp salt and 1 tsp Oil. Mix well
  • Add water in parts and knead to a smooth dough.
  • Let the dough rest for 30 mins.
  • After the resting time, divide the dough into 4 equal balls. Dudt each ball with dry wheat flour and roll into a thin roti.
  • Heat a tawa. Place the rolled out roti over the hot tawa and keep the flame to medium. Cook until Brown spots appear on both sides of the roti.
  • Transfer it to plate and repeat the same for remaining dough.

For making Paneer Filling

  • In a pan, add oil.
  • Once hot, add ginger garlic paste. Saute briefly.
  • Add chopped Onions and green chillies. Cook till onion starts browning.
  • Now add turmeric powder, Red Chilli Powder, Coriander powder, Roasted Cumin Powder, Garam masala and Salt. Saute for 10 seconds.
  • Add chopped tomatoes and mix well. Cook till everything is combined well.
  • Now add the Cubed Paneer and give a good Mix. Keep this filling aside.

For Toppings

  • Finely chop the Onions and Keep it ready.
  • Next finely chop the green chillies and soak in either vinegar or Lemon juice for 15 - 20 mins.

How to assemble Paneer Roll / Paneer Frankie

  • If you are using leftover roti, then heat the roti before assembling.
  • Take a roti and place spicy paneer filling over it.
  • Sprinkle chopped Onions, Chaat Masala and pickled green chillies over the filling.
  • Now wrap the roti tightly into a roll.
  • Serve with tomato Ketchup or Green chutney.

Notes

You can spread green chutney over the roti before placing the masala. 
You can also add vegetables like cucumber, tomato, carrot with the filling.
Instead of the spicy paneer masala filling, you can fill the wrap with paneer tikka too.
Assemble the Roll Just before serving. Else the roll will become soggy.
