We have to dry the shredded/ grated coconut without any moisture content. You can buy it any Super markets as it is easily available. But this recipe is for those who wish to do it from scratch. The recipe is so simple. You can either do it in Oven or even on stove top. I have shared both the methods. For making Desiccated coconut, you need to shred/grate flesh of the coconut(only the white part). You can line a baking tray and spread the grated coconut on it and bake for 15 – 20 mins at 120 C  / 250 F or until dry and brittle. If you prefer to do it on stove top, heat a pan and saute the grated coconut in lowest heat for 10 – 15 mins. Make sure you stir in between. Let us see the step by step procedure with pictures below.

Desiccated Coconut Uses:

You can use it as a topping, coating, or for decorating cakes, biscuits, chocolates and much more. You can sprinkle it on Vegetable stir fry too. It will impart a nice coconut flavour and texture to the dish. Desiccated coconut stays good for longer in refrigerator. Make a batch and store in refrigerator for later use.

Desiccated Coconut

Desiccated Coconut is finely shredded and dried flesh of coconut. Follow the recipe to make desiccated coconut at home

How to make Desiccated Coconut

  • Break the coconut into two.
  • I used Coconut Grater for Shredding the coconut. You can
    also simply chop the white part of coconut and pulse it in a food processor.

Method 1 : Stove Top

  • Heat a pan and add the grated coconut to it.
  • Dry roast the coconut in lowest heat without browning.
  • Saute till it is dry and no moisture content is left. It took 12 - 15 minutes for me.
  • Remove from the pan and cool it completely. Store in an air tight container in refrigerator.

Method 2 : Oven

  • Preheat the oven to 120 C/250 F.
  • Line a baking tray with parchment paper and spread the shredded coconut in the baking tray.
  • Bake it in the oven for 15 to 20 mins. Stir it in between.
  • It should be dry and brittle. If not place it back in the oven for 5 - 10 more minutes.
  • Cool it completely. Store in a air tight container in refrigerator.
