Checkout Idiyappam | Sevai | String Hoppers – It is a super delicious steamed Rice Noodles from South India which is usually had for breakfast or dinner. The recipe is so simple with very few ingredients and it is super easy to make.

I am back to blogging after a long time and wanted to post a family favourite recipe. This post was in draft for a long time and I wanted it to be published now. Idiyappam is an easy breakfast recipe made with rice flour and can  be served with Vegetable Kurma or sweetened coconut milk. For making Idiyappam, you need a idiyappam press / maker. You need a press with small sized holes. The idiyappam will be thin unlike noodles which is thick.

If you have a fussy eater at home, Idiyappam is one of those dishes which will be kid’s favourite. I usually serve it with Veg Kurma but my little one likes it with sweetened coconut milk. It is also a healthy option for breakfast as it steamed and light on stomach. Traditionally, Idiyappam is made with raw rice which is soaked, then dried and ground in a mill to a fine powder. But I used rice flour which is readily available in supermarkets. All we meed to do is add salt to the flour and add hot water little by little to the flour and knead a smooth, non-sticky dough. Then this dough is put into idiyappam maker and squeezed to get thin rice noodles. next, the rice noodles is steamed in an Idli cooker to get soft Idiyappam.

Idiyappam with Veg Kurma

I served Idiyappam with Veg kurma and it was super delicious. Those were very soft in texture and tasted amazing. You can also serve with sugar sprinkled over top and with sweetened coconut milk.

Equipment

  • Idiyappam maker / press

Ingredients

  • 2 cups Rice Flour
  • 1 tsp Gingelly Oil
  • salt As required
  • 1 1/2 - 1 3/4 cups Water

Instructions

How to make Idiyappam

  • In a bowl, add water, a tsp of oil and bring it to a boil. Once the water starts to boil, turn off the flame


  • Add the rice flour, salt in a bowl and mix well. Add hot water little bu little to the rice flour and stir with a spatula. Continue adding water little by little to the rice flour and mix well until a soft, smooth and non-sticky dough is formed.
  • When the dough is warm, knead it for 1-2 mins.
  • Grease the inside portion of the idiyappam press. Now take a portion of the dough and fill it inside the idiyappam maker. Press it over the steamer plate well so that you get nice and thin rice noodles.
  • Steam the idiyappam for about 5 mins. Let the idiyappam cool  before gently removing from the steamer plate.
  • Serve hot with Veg Kurma or sweetened coconut milk.

Notes

  • I used 1 1/2 cups of water for 2 cups of Rice flour. It may vary based on the quality of rice flour. 
  • If the dough is sticky while kneading, grease your palm and try kneading again.
  • Do not overcook the idiyappam, it will turn rubbery.
