Kuzhi Paniyaram

Kuzhi Paniyaram / Kara Paniyaram is one of the breakfast recipes made throughout South India. Since it is made in a pan which has small moulds (kuzhi), it is known as Kuzhi Paniyaram. It is also called as paddu in kannada, ponganalu in telugu and appe in Konkani. If you are bored of idli and Dosa, you can paniyaram. It can be easily made with leftover Idli / Dosa batter or you can grind batter for making paniyaram with raw rice and urad dal. Usually, when the dosa batter turns sour, we make paniyaram as it tastes good. There is also a sweeter version of paniyaram. I will try to post that recipe soon. Let’s see how to make Kara Paniyaram / Kuzhi Paniyaram. We need a special pan for making paniyaram which has small moulds in it. If you dont have one, you can get it here.

 

 

It is worth investing. Traditionally it is made in cast iron paniyaram pan. It requires lots of oil compared to non stick pan. I use non stick pan for making kuzhi paniyaram.  It can be served for breakfast / dinner along with Chutney or a evening time Snack. Kara paniyaram and coconut chutney is a classic combo. We also make a potato curry at home to go along with paniyaram. It tastes so good. The sour fermented batter is seasoned with spices and onions and then fried in the paniyaram pan. The Paniyaram will be crispy on the outside and spongy on the inside. If you want to make the paniyaram batter from scratch, here is the recipe.

How to make Kuzhi Paniyaram

To make Batter

  • Wash and soak the rice and the urad dal with the fenugreek seeds in a bowl for about 4 hours.
  • Grind it to a smooth paste. Add salt and Mix well.
  • Ferment the batter for 8 hours (or overnight) till the batter doubles in volume.
  • Now the Paniyaram batter is ready to make. You can store it in the refrigerator and make it later too.

To make Kuzhi Paniyaram

  • Heat a pan.
  • Add oil and temper with mustard seeds, chana dal and urad dal.
  • Add the chopped onions, green chillies and curry leaves. Cook for 2 mins, till it becomes transparent . If you wish, you can also add vegetables and cook now. You can add carrot, beetroot, corn or capsicum. It tastes good.
  • Add the mixture and chopped coriander leaves to the batter and mix well.
  • Heat the kuzhi paniyaram pan . Drizzle 1/2 tsp of oil in each mould.
  • Pour the batter in each mould. Fill each mould till 3/4th. Wait till you see bubbles over the batter. It will take about a minute to cook on one side. Gently flip the paniyaram to the other side using a wooden which comes along with the paniyaram pan. Drizzle 1/2 of oil now and let it cook for a minute.
  • Cook till both sides are cooked and golden on the outside. Make sure you cook paniyaram on medium flame. This will give crispy paniyaram. kuzhi paniyaram / Kara Paniyaram is ready to be served.

Ingredients

  • 2 cups Idli/Dosa Batter
  • 1 Onion finely chopped
  • 4 Green chillies finely chopped
  • Curry leaves few
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Urad dal
  • 1/2 tsp Chana dal
  • Coriander leaves finely chopped, handful
  • Oil as required

Instructions

  • Wash and soak  1 cup rice and and 1/4 cup urad dal with the 1 tsp fenugreek seeds in a bowl for about 4 hours.
  • Grind it to a smooth paste. Add salt and Mix well.
  • Ferment the batter for 8 hours (or overnight) till the batter doubles in volume.
  • Now the Paniyaram batter is ready to make. You can store it in the refrigerator and make it later too.

To make Kuzhi Paniyaram
