Ennai Kathirikai Kulambu Recipe with Step by step pictures – Ennai Kathirikai Kulambu or Brinjal Curry is a South Indian delicacy in which Brinjals are fried and simmered in tangy and spicy gravy.
There are many variation of making Ennai Kathirikai Kulambu. The Recipe which I share here is our family favourite. We have to grind a special masala for this Ennai Kathirikai Kulambu. The masala comprises of many ingredients which are easily available at home. You can slit the Brinjals and stuff this masala inside too. But I just add this masala to the gravy alone. Main thing in this Kulambu is you have to fry the brinjals in oil and then add to the curry. you can add Tamarind juice as per your taste preferences.

How to make Ennai Kathirikai Kulambu:
1. Keep your ingredients Ready!
2. In a pan, add a tsp of oil. Add all ingredients mentioned under “For Masala” except Coconut. Fry till aroma emanates. It will take about 3-4 mins.
3. Switch off the flame and add the coconut. The heat from the pan is enough for coconut. Keep this aside. Let it cool. Once cooled, grind it to a fine paste by adding little water.
4. Wash brinjals well. Discard the stem portion. Make a cross cut leaving the bottom intact. Checkout the image below.
5. Check if there are any worms inside the brinjals. If so, discard it.
6. Now Fry the brinjals in oil. Fry till colour changes.
7. In a pan, add oil.
8. Once hot, add mustard seeds. Let it splutter. Then add Split urad dal. Let the dal turn golden.
9. Now add Shallots and curry leaves.
10. To this, add the ground masala, salt and 1 cup of tamarind water. Let it come to boil.
11. Now add Fried brinjals and let the gravy simmer for 5-7 mins or till oil separates.
12. Add chopped Coriander Leaves and mix well. Switch off the flame.

Ennai Kathirikai Kulambu
Ingredients
- 200 Grams Brinjals 6 - 7
- 12 Shallots finely chopped
- Curry leaves – few
- 1/4 tsp Mustard seeds
- 1/4 tsp Split Urad Dal
- 1/4 Cup Sesame Oil / Gingelly Oil
- Tamarind Goose Berry sized, Soak in 1 cup water for 20 mins.
For Masala:
- 1 tbsp Coriander Seeds
- 1 1/2 tbsp Grated Coconut
- 4 Dry Red chillies
- 1/2 tsp Cumin – ½ tsp
- 1/4 tsp Pepper corns
- 1/2 tsp Fennel / Sombu
- 1/2 tsp Gram Dal
- 5 Groundnut – 5
- 1/4 tsp Sesame
- 1/2 tsp Poppy seeds / kus kus
- 5 Garlic cloves
- Ginger – a small piece
- Cinnamon – a small piece

Notes
- You can skip Few ingredients like groundnut, poppy seeds/kus kus, if not available.
- Instead of frying the Brinjal in oil, you can directly cook in the gravy too. But frying gives a different and wonderful taste.

- You can skip Few ingredients like groundnut, poppy seeds/kus kus, if not available.
- If you are a beginner in cooking, add tamarind water as per your preference after tasting.
- Instead of frying the Brinjal in oil, you can directly cook in the gravy too. But frying gives a different and wonderful taste.
