Rice Puttu / Arisi maavu Puttu Recipe – Puttu is one of the most popular and healthy breakfast of south India.
It is made by steaming the rice flour along with coconut. This can be served with kadala curry or banana or ghee and sugar. It tastes so good and you will definitely want for more. The recipe is simple but the rice flour to water ratio remains the trick to get soft Puttu. Try this recipe and let me know your comments.

How to make Rice Puttu /Arisi maavu Puttu
- In a pan, roast the rice flour in a medium flame till you see the steam coming out. This approximately takes 6 – 7 mins.
- Take the roasted rice flour in a mixing bowl. Add salt to it. Mix well
- Add water little by little to flour. Mix it with your fingers.
- To check if the mixture is ready, when you press a portion of the flour between your palms, it should form a lump. And when you press harder it should crumble.
- The mixture should be moist. When it is at right consistency, break all the tiny lumps with your fingertips. You can even use mixer-grinder. Use the pulse option.
- In the cylindrical tube fill the flour mixture and coconut. First place the perforated plate in the cylindrical tube. Add 2 tbsp of grated coconut followed by flour mixture. Fill it till the half. Then add 2 tbsp of coconut and add the flour mixture till the top. End with coconut layer on top. Close it with the lid
- Fill the Puttu pot with water and place the cylindrical tube over it. Keep in high flame. Wait till the steam comes out from the upper lid. Then keep in low flame for 5 mins. Switch off and remove the cylinder tube. Let it cool for 3-5 mins.
- Remove the Puttu from the tube using a wooden ladle by pushing the perforated plates which placed at the bottom.
- Serve with banana and sugar or kadala curry.

Notes
- Puttu can be made with Wheat flour, Ragi flour, Red Rice Flour, etc. Those are very healthy options for breakfast. I will try to post recipes for those soon.
- Take extra care while adding water. Adding too much or less will affect the texture of Puttu
