I always prefer One pot dishes during weekdays. It is easy to make and saves a lot of time. Also they are perfect for lunchbox. This Beetroot Rice was also made for Lunchbox. If you have leftover Rice in hand, then you can make it under 10 – 15 mins.

It is a simple and quick rice made with beetroot which is so flavorful and colourful. Wondering how to add beetroot to your kids’ diet? Try this recipe for their lunchbox and they’ll love it for sure. In this pulao, you will not get the strong flavor of beetroot, so it will be liked by all. This Rice doesn’t need any special accompaniment. A Simple raita or potato chips would do. You can also add any other veggies along with beetroot. Beetroot Rice

Ingredients

  • 1 Beetroot grated
  • 1 cup Rice soaked
  • 1 Onion thinly sliced
  • 1 tsp Ginger-garlic paste
  • 1 Green chilies
  • 1/2 tsp Red chilli powder
  • 1/2 tsp Turmeric powder
  • Salt as required
  • 2 Cloves
  • 1 inch Cinnamon
  • 1 tsp Cumin seeds
  • few Mint Leaves
  • 3 tbsp Oil

Instructions

How to make beetroot rice

  • In a pressure cooker, add oil.
  • Once hot, add cinnamon, cloves and cumin seeds.
  • Now add thinly sliced onions and slit green chillies.
  • Cook till onions turn golden brown.
  • Now add Ginger-garlic paste and cook till raw smell leaves.
  • Add turmeric powder, red chilli powder and salt. Cook for 2 mins.
  • Now add grated beetroot and mix well.
  • For 1 cup of rice, add 2 cups of water. Adjust water level according to the quality of rice used.
  • Bring it to boil. Add soaked rice and mint leaves.
  • Close the lid and pressure cook for 3 whistles. Let the pressure release naturally.
  • Yummy Beetroot Rice is ready!

Notes

  • This is a mildly spiced rice. Adjust Spice level according to your taste.
  • Mint leaves and Coriander leaves are optional.

How to make Beetroot Rice 

1. Keep your ingredients Ready!

3. Now add thinly sliced onions and slit green chillies. Cook till onions turn golden brown.

4. Now add Ginger-garlic paste and cook till raw smell leaves.

5. Add turmeric powder, red chilli powder and salt. Cook for 2 mins.

6. Now add grated beetroot and mix well.

7. For 1 cup of rice, add 2 cups of water. Adjust water level according to the quality of rice used. Bring it to boil. Add soaked rice and mint leaves.

Add water and pressure cook

8. Close the lid and pressure cook for 3 whistles. Let the pressure release naturally.

Tips for making Beetroot rice:

  • This is a mild spiced Recipe. You can increase spice level by adding 1 more green chilli.
  • Mint leaves and Coriander Leaves are optional
