I had a big bunch of Mint leaves in hand. Then, thought of making this quick and easy rice recipe. I always love the fresh flavor of Mint leaves. Flavorful mint, coriander and green chlili paste is mixed with cooked rice. I tried this Mint rice for my husband’s lunch box and it was a hit. Even your Kids would love this too. I served it along with Onion Raita. A very simple yet delicious lunch box recipe here for you. This can be prepared under 10 mins if you have cooked rice in hand. Mint Rice Recipe
Mint Rice, Pudhina Rice
Ingredients
- 2 cups Cooked Rice
- 1 cup Mint leaves loosely packed
- few Coriander leaves
- 2 Green chilies
- 1 Onion thinly sliced
- 2 Cloves
- 1 inch Cinnamon
- Salt as required
- 3 tbsp Oil / Ghee
Instructions
How to make Mint Rice
- In a blender, take mint leaves, coriander leaves, Green chilies, cinnamon and cloves.
- Blend it to a fine paste.
- In a pan, add oil. Once hot add sliced onion and sauté well.
- Let the onion turn translucent.
- Now add mint paste and ¼ of water. Let it simmer for 5 mins.
- Now add cooked rice and salt. Give a good mix.
- Switch off the heat and serve
Notes
- Ginger can also be added
- You can even omit coriander leaves and prepare with mint leaves alone.
- You can add equal measure of coriander and mint leaves.
How to make Mint Rice

- In a pan, add oil. Once hot add sliced onion and saute well. Let the onion turn translucent.
- Now add mint paste and ¼ of water. Let it simmer for 5 mins.
- Now add cooked rice and salt. Give a good mix. Fluff up with a fork if the rice grains are breaking.
- Switch off the flame and Serve with Onion Raita or Chips!
