Lemon Rice Recipe – A quick and easy preparation made with rice, lemon extract and tempered with mustard seeds, split urad dal, gram dal and groundnut. 

Lemon Rice

This is a popular South Indian rice variety which can be prepared under 10 mins. It is not only perfect for lunch box but also for travel or picnic. Lemon rice or chitrannam tastes the best when rested for few hours, so that rice absorbs the tanginess from lemon and spiciness from chillies. It stays good for long time and hence the best option to take during travel. You can also use leftover rice to make this South Indian Lemon rice. This is one of the dish which feature regularly in my kitchen if I run out of time. Such an easy recipe which saves lot of time.

During my hostel days, Lemon rice and potato fry was one of the combination served for lunch. I really loved the combination so much that I continue to serve the same combination whenever I make this dish at home. Try this variety rice for lunch box and you would love it for sure.

How to make Lemon Rice

  1. Spread cooked rice over a plate.
  2. In a pan, add oil.
  3. Once hot, add mustard seeds and let it splutter.
  4. Add split urad dal, gram dal and groundnut. Fry till colour changes to golden.
  5. Now Add curry leaves, split green chillies, ginger julienne, turmeric, salt and 1/4 cup of water.
  6. let it simmer for 2 minutes and thicken slightly.
  7. Add juice of 1 lemon and switch off the heat.
  8. Pour this tempering over cooked rice and mix well.
  9. Check for salt and add if required.

Ingredients

  • 2 cups Cooked rice
  • 2 Lemon
  • 2 tsp Green chillies finely chopped
  • 1 tsp Ginger finely chopped
  • Groundnut – a handful
  • Coriander leaves – few
  • Curry leaves – few
  • 1/2 tsp Turmeric powder
  • Salt as required
  • 1/4 tsp Mustard seeds
  • 1/4 tsp Split Urad dal
  • 1/4 tsp Gram Dal
  • 2 tbsp Oil

  • Fry till dal color changes.
  • Add curry leaves, green chilies and ginger.
  • Now add turmeric and salt.
  • Add juice of 1 lemon and switch off the heat.
  • Pour this tempering over cooked rice and mix well.
  • Check for salt and add if required.

Notes

  • You can also use leftover rice for this recipe.
  • Roll the lemon over a surface to get most juice out of the lemon.
  • You can also add Mint leaves for more flavour.
  • Do not bring the tempering to boil after adding lemon juice. It will turn bitter.
