Cauliflower Roast | Spicy Indian Cauliflower Roast Recipe – A spicy and delicious Cauliflower roast in South Indian style which is a great side for South Indian Lunch.
Cauliflower is one of my favourite vegetable. I love trying recipes with Cauliflower(also called as Gobi). If you love cauliflower just like me, then you should definitely try Gobi 65 and Gobi Manchurian. Now coming to this spicy cauliflower roast recipe, all you need is Indian spice powders like Red Chilli Powder, coriander powder, garam masala and roasted cumin powder. The cauliflower florets are pan roasted slowly in medium low heat for at least 30 minutes. This is a classic South Indian dish which goes well with sambar rice, curd rice, rasam rice, etc. A perfect side dish for any rice varieties. How to make Cauliflower Roast
- Cut the cauliflower into small florets.
- Boil 2 cups of water in a vessel. Once it started boiling, add turmeric powder and a pinch of salt it. Add the cauliflower florets and switch off the flame. Leave it for 3 – 5 minutes. Cauliflower should not be fully cooked.
- Add Oil in a pan. Add the par boiled cauliflower to oil and mix well. cauliflower florets should be coated well with oil. Keep the flame medium low.
- Now add Red chilli powder, coriander powder, garam masala, roasted cumin powder and salt. Mix well.
- Cover and cook for 8 – 10 mins. Saute in between.
- Roast in low flame for 15 – 20 mins. Don’t forget to saute in between.
- Roasting cauliflower requires patience. But the result will be great. I used well seasoned Cast iron pan for roasting the potatoes. It was very easy and cauliflower did not stick to the pan.
- Once the cauliflower is nicely roasted, switch off the flame . Serve hot with curd rice or rasam or sambar.

Notes
