Chettinad Potato Fry – A spicy and delicious Potato fry in South Indian style which is a great side for South Indian Lunch.

Potato is everybody’s Favourite.  None would disagree on that. This spicy Potato fry is a classic South Indian dish which goes well with sambar rice, curd rice, rasam rice, etc. A perfect side dish for any rice varieties. A Simple and easy recipe which can be done by even beginners. This can be done in 10 mins. How to make Chettinad Potato Fry

  1. Cut potatoes into 2 and pressure cook for 1 whistle. Alternatively, in boiling water, add potatoes and cook for 5 – 7 mins. Peel off the skin and cut into small cubes.
  2. Add Oil in a pan. Add the cooked potatoes and curry leaves to oil and mix well. Potatoes should be covered with oil. Roast till potatoes turn golden. cook
  3. Now add the spice powders and salt. Mix well.spice powders
  4. Roast in medium flame for 5 – 7 mins. Roasting potatoes requires patience. But the result will be great. I used well seasoned Cast iron pan for roasting the potatoes. It is very easy and potatoes does not stick to the pan. fry potatoes
  5. Switch off the flame. Serve hot with curd rice or rasam or sambar.

Ingredients

  • 4 Potato
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red chilli powder
  • 1 tsp Coriander Powder
  • Salt as required
  • 2 tbsp Oil

Notes

  • Adjust Spice level according to your taste preference.
  • Cook potatoes Partially.
  • Add Pepper powder for a nice flavour and spicy potato fry

Tips:

  • Adjust Spice level according to your taste preferences
  • Do not Over cook the potatoes, else it will mushy while roasting.
  • You can add Ground pepper before switching off the flame. It gives a nice flavour to the Potato fry.
  • Use well seasoned pan/kadai for roasting potatoes.
