Mutton Liver Fry

Mutton liver(also called as Kaleji) is one of the nutrient dense food which when taken in moderate quantity provides lot of health benefits. Mutton liver is a very good source of Iron, hence people suffering from anaemia can include liver in their diet.

This Mutton Liver fry or Kaleji Masala is a simple and spicy preparation which goes well with Roti or Rice. Addition of pepper powder enhances the taste. One thing to be noted while  cooking liver is, do not overcook. If over-cooked, the liver becomes hard and chewy. Cook covered for 12- 15 mins in medium flame. You can also pressure cook for 2 whistles.

We had this with Steamed Rice and it was Awesome. Make sure, you include Liver at least once a month in your diet. How to make Mutton Liver Fry recipe:

  1. Wash Liver thoroughly for 4 to 5 times. Then cut into bite size pieces.
  2. Heat oil in a pan. Once hot add Fennel seeds / Sombu to the oil. Let it splutter. Sombu gives a nice flavour to the non-veg recipes.
  3. Add curry leaves and let it become crisp.
  4. Now add Chopped Onions and cook till translucent.
  5. Pound garlic well and add it to the pan. Fry for few seconds.
  6. Add Turmeric powder, Red chilli Powder, Coriander powder and Required salt.
  7. Now add liver to the masala and mix well. Let the color of liver change.
  8. At this stage add ½ cup of water and cook in medium flame for 12 – 15 mins. Make sure you stir after every 5 minutes. Do not Overcook the liver. It will become hard and chewy.
  9. Check if the liver has cooked and turned soft. Now add freshly ground pepper powder and mix well.

Ingredients

  • 250 grams Mutton Liver
  • 1 Onion finely chopped
  • 4 pods Garlic
  • 1/4 tsp Turmeric powder
  • 1 tsp Red chilli powder
  • 1 1/2 tsp Coriander Powder
  • Salt as required
  • 1/2 tsp Pepper powder
  • 1/2 tsp Fennel / Sombu / Saunf
  • Curry leaves – few
  • 2 tbsp Oil – 2 tbsp
