Indian Chicken Curry Recipe – Here is the recipe for Traditional South Indian Chicken Curry which is made from scratch. South Indian Cuisine is known for spicy and tangy foods. South Indians use variety of spices for preparing non-vegetarian dishes. The dishes are spicy and hot with freshly ground masala. The ratio of ingredients is very important for the ground masala. So double check the ingredients list before starting the prep work. The ingredients list may look long, but preparing this curry is really easy! You will not be disappointed with the fresh flavours from the curry. There are many other variations made to chicken curry. How to make Indian Chicken Curry ?

  1. Take all the ingredients mentioned under “For Masala”(in the ingredients list) in a blender and grind to a fine paste. You can add little water while grinding. Check notes for Substitutes.
  2. In a wide pan, add cooking oil. Once hot, add mustard seeds.
  3. As soon as mustard splutters, add curry leaves and chopped shallots(or Onions).
  4. Once shallots turned soft, add turmeric powder, Red chilli Powder, coriander Powder and mix well. Let it cook for a mins.
  5. Add ginger and garlic paste and mix well. Cook till raw smell goes off.
  6. Now add cleaned chicken pieces, required salt and 1/2 cup of water. Cover and cook for 5 mins over medium heat. cook chicken
  7. Add the ground paste, 2 cups of water to the pan and bring it to boil.
  8. cover the pan and turn the heat to low. Simmer for 15 – 20 minutes or until chicken is cooked through. Don’t forget to stir now and then.
  9. Add chopped coriander leaves/ Cilantro and Switch off the heat.
  10. Serve Indian Chicken Curry with Rice or any flat breads.chicken curry in a bowl

Ingredients

  • 1 kg Chicken Cut into small pieces
  • 1 Cup chopped Shallots or Onions
  • 1 tsp Ginger Paste
  • 1 tsp Garlic Paste
  • 1/2 tsp Mustard Seeds
  • 1/4 cup Vegetable Oil / Sunflower Oil
  • Curry leaves few
  • Coriander Leaves / Cilantro few
  • 1/2 tsp Turmeric Powder
  • 2 tsp Red Chilli powder
  • 1 tsp Coriander Powder
  • Salt As Required

For Masala

  • 2 tbsp Coriander Seeds
  • 1 tbsp Roasted Gram dal optional
  • 1 tsp Fennel seeds
  • 1 tsp Cumin seeds
  • 1/2 tsp Peppercorns
  • 2 tbsp Grated Coconut

Notes

  • If you do not have fresh grated coconut for preparing masala paste, grind remaining ingredients without coconut. Then add 1 cup of Coconut milk mixed with 1/2 cup of water to the the curry when you add masala paste.
  • Substitute for Coriander seeds is Coriander Powder. For every 1 tbsp of seeds, add 1 1/2 tbsp of powder while grinding.
  • Roasted Gram Dal is optional
  • This chicken curry is medium spicy. You can Adjust the spice level according to your taste preferences.

Notes:

  • If you do not have fresh grated coconut for preparing masala paste, grind remaining ingredients without coconut. Then add 1 cup of Coconut milk mixed with 1/2 cup of water to the the curry when you add masala paste.
  • Substitute for Coriander seeds is Coriander Powder. For every 1 tbsp of seeds, add 1 1/2 tbsp of powder while grinding.
