Vanjaram Fish Fry, Chettinad Fish Fry

Chettinad cuisine is known for its unique flavor. It is spicy, flavorful and aromatic. Chettinad Non vegetarian dishes are very famous. Last weekend, I made Vanjaram Fish Fry in Chettinad Style. My DH tasted and was totally impressed. It was very delicious and we wanted for more. I used Vanjaram fish (also known as seer fish), you can use any variety of fish like Sheela Fish and use the same masala.

How to make Vanjaram Fish Fry / Chettinad Fish Fry

  1. In a mixing bowl, add all the spice powders, ginger garlic paste and tamarind paste. Add little water and make it into a fine paste.Vanjaram Fish Fry pic2

  4. You can either deep fry or roast it over a tawa. I always prefer tawa fry.
  5. Heat a tawa and add 3 tsp of oil. Spread it all over the tawa.
  6. Once the tawa is hot, place the fish and drizzle oil over it. The flame should be high. Let it cook for 1 min.Vanjaram Fish Fry pic5

  8. Now reduce the flame to low and flip the fish and cook for a min.
  9. Flip again and cook for a min. The fish should be cooked in high flame on both sides for 1 min each and in low flame for 1 min each side.

Ingredients

  • 4 pieces Vanjaram Fish
  • 2 tsp Red Chilli powder
  • 1 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Pepper powder
  • Salt as required
  • 1 tsp Tamarind paste
  • 2 tsp Ginger garlic paste
  • Oil for frying

Notes

  • Tamarind Paste gives a good flavor to the fish. You can even use lemon juice instead of tamarind.
  • Adjust Spice level according to your taste.
