Ingredients

  • 500 grams prawns cleaned and deveined
  • 3 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 onions finely chopped
  • 2 tomatoes finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies slit
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon Pepper powder
  • Salt to taste
  • A handful of curry leaves
  • Fresh coriander leaves for garnish

Instructions

Preparing the Prawns

  • Clean the Prawns:
  • Ensure the prawns are cleaned, deveined, and washed thoroughly. Drain the excess water and set them aside.
  • Marinate the Prawns:
  • Marinate the prawns with a pinch of turmeric, half of required red chili powder and salt. Let them rest for about 10 minutes.

Cooking the Masala

  • Heat the Oil:
  • In a large pan, heat the oil over medium heat. Add the mustard seeds and cumin seeds. Let them splutter.
  • Sauté the Onions:
  • Add the finely chopped onions and curry leaves. Sauté until the onions turn golden brown.
  • Add Ginger-Garlic Paste:
  • Add the ginger-garlic paste and green chilies. Sauté until the raw smell disappears.
  • Cook the Tomatoes:
  • Add the chopped tomatoes. Cook until they turn soft and oil begins to separate from the mixture.
  • Add the Spices:
  • Add turmeric powder, red chili powder, coriander powder, garam masala and cumin powder. Mix well and cook for a few minutes until the spices are well combined.
  • Add the Prawns:
  • Add the marinated prawns to the mixture. Cook for 5-7 minutes until the prawns are cooked through and have absorbed the flavours of the spices.
  • Final Touch:
  • Add Pepper powder and adjust salt to taste. Cook for another minute and turn off the heat.
