Jack fruit is a seasonal fruit. Now as the summer has started, I could see lots of jack fruit in markets. Jack fruit is a yummy fruit and its seeds are also edible. Jack fruit seeds would be little sticky and wet. Dry them in sun and use for cooking. Seeds are sold separately nowadays. If you buy seeds, you can skip drying. Today I made this stir fry with the jack fruit seeds/palakottai. My mom used to make this stir fry at home, but I never tasted. Trust me, when I made this and tasted today it was delicious. Palakottai can be used for making sambar, Kuzhambu, roast, etc. Follow the recipe for Palakottai Poriyal/Jack Fruit seed Stir Fry.
