Kovakkai / Tindora / Ivy gourd / Dondakaya grows in a vine. It resemble small cucumbers and very popular vegetable across India. Though stir fry with Kovakkai is popular like pavakkai, pudalangai poriyal, Seppankizhangu Roast, I never tried until recently. It has a crunchy texture and tastes so good when roasted slowly on a low heat. This Kovakkai Poriyal is suggested by my husband. He had tasted in a restaurant and liked it so much. He wanted me to make the same at home. So I thought of making similar to Pavakkai Fry which we make it at home. The result was absolutely delicious and my husband loved it.
While selecting Kovakkai, make sure you get nice green colour ones. Avoid ripened Ones. You can make thin slices or you can cut them lengthwise too. I find thin slices work better and cook quicker. You can adjust the spices levels according to your taste preferences. Try this easy and quick recipe and let me know how it turned out for you. How to make Kovakkai Poriyal
- Cut tindora into thin slices, discarding the edges.
- Add oil in a kadai.
- Add curry leaves and sliced kovakkai.
- Mix well. Kovakkai should be coated well with oil.
- Now add turmeric powder, Red chilli powder and salt.
- Cook in medium flame, stirring now and then.
- Fry till crisp. Add Dry mango powder and give a quick mix.
- Switch off the flame.

- 250 Grams Kovakkai / Tindora
- 1/4 tsp Turmeric powder
- 3/4 tsp Red chilli powder
- 1/4 tsp Dry Mango powder
- 2 tbsp Oil – 2 tbsp
- Salt – as required
- Curry Leaves – few
