Prawn Ghee Roast is a mangalorean delicacy where prawns are roasted in a special masala and ghee. The special masala is very aromatic and flavourful. You can use the same masala as the base for making chicken ghee roast and mutton ghee roast. I have another variant of mutton ghee roast. This Recipe will be a keeper, as it can be prepared under less time. Prawns will turn rubbery if you over cook. So make sure you cook in the prescribed time below. Also cleaning and de-veining the prawns is very important. Otherwise it may cause some digestive issues.

I never knew that ghee would add so much flavor to a non-veg recipe. Be generous in adding ghee and you would love the taste for sure. The masala is cooked well in ghee which makes all the difference. I served it with Rice and it was very yummy. I also made Prawn karandi omelette with leftover prawns from this ghee roast. How to make Prawn Ghee Roast

How to de-vein Prawns ?

  1. Let’s see how to clean prawns / shrimps. First step is to de-vein the prawns. Take a prawn and you would see a black line at the back.Black line at the back of prawn
  2. With a knife slit it, you can easily remove the vein like shown in the picture. Cleaning Prawn
  3. Wash and clean well in running water. Sprinkle some turmeric powder and keep aside.

How to prepare masala for ghee roast

  1. In a pan add 2 tsp of oil. Once hot, add fennel seeds, coriander seeds, jeera and dry red chilli. fry for 2 – 3 minutes. Now add shallots, coriander leaves, curry leaves and fry till shallots turn pink.
  2. finally add grated coconut and give a good mix. Let the masala cool.roast ingredients
  3. Once cooled, grind it to a fine paste. Do not add much water.
  4. In a pan, add 2 tablespoon of ghee. Now add chopped onions, curry leaves and green chilli. Cook till onion turn translucent.
  5. Now add red chilli powder, turmeric powder and Garam Masala. Mix well.add spice powders
  6. Add chopped tomatoes and salt.add tomato
  7. Cook till tomatoes turn mushy and oil separates .
  8. Now add ground masala paste and mix well.add ground masala
  9. Add the cleaned prawns and close with a lid. Cook it for 3 to 5 minutes.add prawns
  10. When you open the lid, you will see prawn has let out its own juices and cooked well.
  11. Now keep the flame in high and roast still Dry.
  12. Garnish with coriander leaves.Prawn ghee roast in a serving bowl

Ingredients

  • 500 grams Prawns / Shrimps
  • 1 Onion
  • 2 Tomato
  • 2 Green chillies
  • 4 Garlic
  • 1 inch Ginger
  • 1 tbsp Coriander seeds
  • 1 tsp Fennel seeds
  • 1/2 tsp Peppercorn
  • 1/2 tsp Cumin seeds
  • 5 Shallots
  • 4 Red Chillies
  • Curry leaves few
  • Coriander leaves few
  • 2 tbsp Grated coconut
  • 1 tsp Red chilli powder
  • 1/2 tsp Garam Masala
  • 1/2 tsp Turmeric powder

Instructions

How to make Prawn Ghee Roast

  • First step is to devein the prawns. Take a prawn and you would see a black line at the back. With a knife slit it, you can easily remove the vein like shown in the picture
  • In a pan add 2 tsp of oil. Once hot, add fennel seeds, coriander seeds, jeera and dry red chilli.
  • Now add shallots, coriander leaves, curry leaves and cook till shallots turn pink
  • Finally add grated coconut. let the masala cool.Once cooled, grind it to a fine paste
  • In a pan, add 2 tablespoon of ghee.
  • Now add chopped onions, curry leaves and green chilli.
  • Add ginger garlic paste and fry till raw smell leaves.
  • Now add red chilli powder, turmeric powder and Garam Masala. Mix well.
  • Add chopped tomatoes cook till Mushy.
  • Now add ground paste and mix well
  • Add the prawns and cook it covered for 5 to 7 minutes in medium flame. Open the lid and you will see prawn has let out its own juices and cooked well.
  • Now keep flame in high and roast still Dry

Notes

  • De-vein and clean the prawns well. Otherwise it may cause digestive issues.
  • Do not over cook prawns, it will turn rubbery.
  • If you want it spicier, add two more chillies.

How to serve prawn ghee roast:

  • Serve with Steamed Rice, Ghee rice , Roti or Paratha.

Notes:

  • Make sure you clean the prawns well. Don’t forget to de-vein.
  • Roast till you reach a desired consistency.
  • Do not over cook prawns, it will turn rubbery.
